Pasticceria Confetteria, Cova, Singapore

13 June 2010

It is not easy to get the Best Uncle award which is awarded by my favourite niece annually. I had to make this little three-year-old beautiful and chubby princess a happy lady. I promised her to get a toy lappy but I took more than six months to fulfill my promise to her. I am too busy with work, photography and study. I always travel around this world for projects and field services, and study in Singapore at the same time. I promised myself to complete my course by end of this year so that I can concentrate Allez Cuisine and photography next year. My niece was treating my gorgeous Macbook as her lappy. I guess I had to get her a lappy before she destroyed it. Coincidently the store where I got her lappy was in Paragon, where my favourite café, Pasticceria Confetteria, Cova was located.

Pasticceria Confetteria, Cova was founded by Antonio Cova who was a pastry chef of the Great Conqueror, Napoleon I. The first Cova was opened beside the famous La Scala Theatre in Milano, Italy. Chef Cova was an expert in pastries and coffee. Soon after the opening of Cova in Milano, the café became the talk of the town. Politicians, professors, musicians, actors and writers went there to meet up to discuss their work with the tasty pastries and coffee. A branch was set up in Singapore more than a hundred years later.

I always go to Cova Singapore, located in Paragon for coffee, pastries and coffee beans at least once a month. It is a good café to either meet up with your friends or spend alone for a quiet weekend. The ambience is classic and elegant. A wide variety of pastries are displayed for selection. Cova is famous for her Sacher cake, a Viennese traditional chocolate cake produced with a selection of the best South America coca mixtures. It is so good that I cannot think of any word to describe it. Folks, if you all are chocolate lovers, you will definitely fall in love with Sacher. I will get this cake as my birthday cake next year. Cova are famous for her cream puffs too. The best cream puff I had was the time I had my coffee appreciation session in Asian Food Channel Studio. The cream puffs from both Cova and AFC Studio were on par. They are again too good to be expressed in words. The cream is creamy and tasty. You will not get tired of it after you taste some cream puffs. More likely you will keep on eating. But watch out for your waistline, you will definitely “get hooked” by the cream puff from Cova.

Cova makes nice coffee too. The regular coffee from Cova is a mixture of seven different kinds of Arabic coffee beans from Mid America and Brazil and they are processed separately before mixing together to from the “Ultimate Taste” coffee blend. The percentage of each kind of coffee beans is well controlled. As the result the aroma, body and the acidity of the coffee is well balanced. I really like the coffee from Cova a lot. In fact I bought the coffee beans from Cova to grind them myself at Hippo HQ. I brew the grinded coffee powder using my French press. I can now enjoy the Cova coffee at home while listen to music, playing my xbox 360 games or even writing a new post for Allez Cuisine. Now I have stop going for Starbucks and Coffee Bean for coffee for my personal leisure.

Folks, bring your friends to Cova Singapore for afternoon tea, you will not disappointed by my recommendation. The dress code is smart casual to formal. If you are not following the dress code, you will look like an “alien” there.

Address:  290 Orchard Road #01-20A Paragon - Singapore

Note: Cream puffs from AFC Studio Singapore cannot be bought. You have to attend the courses and you may have it for your tea break, depending on the chef.

Tawau, Sabah, East Malaysia

Folks, I was not going there for tour and relaxation. I was going there to for field service at a local power plant. That was my third time in Tawau, yet I am do not have opportunity to explore this place. Semporna, Sandakan, Kota Kinabalu are some of the places in Sabah famous for beaches. I must visit those places after I completed my evening course, Master of Science in Systems and Project Management in Nanyang Technological University. I guess I need 6 to 12 months to complete the course.

There are also quite a number of tasty local dishes in Tawau such as Murtabak, Nasi Lalap (Fried Chicken with rice), Seafood Hotplate Steamboat and curry fish head. Tawau is famous for seafood especially fish and lobster since She is near to the sea. There is also a decent italian restaurant near to King Park Hotel that serve near authentic italian pizza.

One day I will return to Sabah to search for the tasty local cuisine, probably next year. Hopefully when I return to Sabah, Old Town Kopi (Coffee in Malay) cafe will setup in the town. Tawau Town is seriously lacking of decent cafes.

Ikea, Singapore

10 June 2010

Kentucky Fried Chicken, a place that does justice to fried chicken and most people will think that, and me too.  It is my all-time favourite fast-food restaurant, and I never fail to visit KFC once per month. I will always have my three-piece-chicken meal with ice lemon tea for my brunch. It was very clever Colonel Sanders to come out with the awesome recipe that is still a mystery to most of us; because of the recipe he also promotes the finger-linking culture worldwide.

Ikea, is a place where you can think of if you want to buy furniture. It is more than a furniture shop. Ikea is also place for gathering and dining. Meatballs and fried chicken wings are the famous dishes in Ikea Singapore. I always tried to make an effort to meet up with my friends in Ikea for dining and gathering every month.

Ikea also does justice to the fried chicken wings in my humble opinion. They are fried without any flour coated on them and the taste is awesome too. The chicken wings are not greasy at all. Let me guess whether I can guess the recipe correct. First the chicken wings are lightly marinated with light soya sauce. Second the marinated chicken wings are deep fried was transferred to oven half cooked. Last the chicken wings are then baked in the oven till they are fully cooked. I guess the favour and the fats of the chicken wings are retained and enhanced in these ways. I believe if garlic and ginger juice are used to marinate the chicken wings, they will taste better.

Ikea fried chicken wing is a dish which is simple and the taste is as awesome as KFC’s fried chickens. If you have time, go there and have your chicken wings there, you will not regret it.

Home, Johor Bahru

What is the best dish in Chin Family? Which dish is sought after that all friends, relatives and people who are willing to pay for my mother to prepare during Dragon Boat Festival? There is only one dish to do justice to this special occasion, rice dumpling. Proudly introduce our family’s Ah Ma (Maternity Grandmother) Rice Dumpling. This recipe passed from my well respected, kind Ah Ma, who doted me a lot, to my mother and subsequently to my sisters.

The rice dumping is filled with glutinous rice, dried shrimps, chestnut, mushroom, salty egg yolks, pork belly and Chinese sausage. You will find most rice dumplings in the market do not have Chinese sausage.  It was I, the Chinese pump young, fine and handsome glutton who suggested adding Chinese sausage in rice dumpling.

The story was in Singapore more than twenty years ago. I was an extremely naughty kid and I was so angry with my mother that she did not bring me to the zoo to see my favorite animal, hippo. I love hippo very much because they are just extremely fat, aggressive, lazy and cute animals that always open their mouth wide open to be fed, just like me. She was busying preparing rice dumpling with my grandmother that time. I extremely did not like Mrs break-her-promise and I wanted to have my revenge. I saw bundles of Chinese sausages that were used for cooking fried rice for lunch and I decided to dice them and mixed with the pork belly and others ingredients, which were soaked with dark soy sauce, and not easily to be recognized by my mother. Three hours later, the rice dumplings were fully cooked, and I was the first one to try the rice dumpling. I almost fainted because I did not want to try the rice dumplings with my special “ingredient”, and I really thought that they were tasted terrible. Mrs break-her-promise threatened me by saying: “no rice dumpling, no hippo”! I was so upset and I forced my mouth open and taste it. When I tasted the glutinous rice, it was not as salty and rich in taste as those in the market. It was plain, almost approach to plain but with a tiny bit of saltiness within the glutinous rice. The fillings were tiny bit salty and the favour was not strong. However if I ate both together, the rice dumplings was awesome. Both fillings and glutinous rice harmonized together very well. The Chinese sausage brought a tiny bit of sweetness to the fillings. The rice dumplings were a bit salty yet a bit sweet. The taste overall was light favour and the rice dumplings which were made by my mother and grandmother were really truly different from those in the market. Those found in the market were generally quite salty and rich in favour. They were tasty but if you ate them more than two at the same time, you would grow tired of their taste. My grandmother’s recipe was really different. I found myself eating more than four rice dumplings at the same time and I never actually grew tired of their taste. They were a bit plain but were tasty. Her recipe was truly magically. Now I know the reason why my parents’ business associates, relatives and friends wanted my mother’s rice dumplings badly.

After that incident, my lovely grandmother added Chinese sausages into the recipe. and the recipe will continue to pass on………

Note: After I ate my rice dumpling, Mrs break-her-promise told me: “Dear son, after you ate four rice dumplings, please look in front of the mirror and you will see a hippo!”
